Fragrant Black Chickpea Stew: Comfort Food at Its Finest

There are some meals that are just pure comfort food, and this fragrant black chickpea stew is one of them. It’s warming, deeply flavorful, and comes together in about 30 minutes when you already have your chickpeas or other protein cooked and ready to go.

This is one of my favorite meals ever. The process is simple: start by cooking down the base, build the flavor with whole and dry spices, let the moisture evaporate, and then bring everything together with chickpeas and water.

As the stew cooks, all those flavors have time to come together and mellow out. The result is a fragrant, comforting dish that’s wonderful served with rice and a salad.

You begin by blitzing the first four ingredients together and cooking them down. Turmeric and salt go in first, helping the onions break down as the mixture cooks.

Then come the whole spices. You can crush them a little if you’d like, but they can also be added whole. As they cook, they become fragrant and start releasing their wonderful aromas.

Next, the dry spices go in. This is an important part of the process because you want the moisture to completely evaporate before adding the acid. Once the mixture is cooked down, you add either mango powder or tomato paste and mix everything together.

At this point, you can really start to smell the spices and fragrances coming together.

Add the Acid

Now it’s time to add the acid.

You can use either mango powder or tomato paste. Mix it into the spice mixture and let everything come together.

The mixture should be fragrant at this point, with the spices and aromatics creating a delicious base for the chickpeas.

Add the Chickpeas and Water

Add 2 cups of cooked black chickpeas.

If you prefer, you can use cooked white chickpeas, another lentil, or another protein instead. The recipe is flexible in that way.

Pour in about 2 cups of water and give everything a good stir.

Now let the stew cook down.

Let the Flavors Come Together

This is where the magic happens.

Allow the chickpeas, spices, and water to cook together so all the flavors can really come together and assimilate. As the stew cooks, everything mellows out.
